GBT Realty has found the anchor restaurant at its Class-AA office tower in downtown Nashville. Chotto Matte leased 11,000 square feet of the first and second floor retail space at ONE22ONE at 1221 Broadway.
This will be the fourth location for the restaurant in the United States, joining other locations in Miami, Los Angeles and San Francisco. The Nashville location is expected to open in early 2023.
Kurt Zdesar, founder and creator of Chotto Matte, launched the concept in 2013 in Soho, London, after years of research in Peru and Japan. Chotto Matte offers Nikkei cuisine, which is a combination of Japanese and Peruvian ingredients and techniques.
Construction on ONE22ONE continues with an expected delivery of office space during the second quarter of this year. The future headquarters of FirstBank will be located here.
Chotto Matte remains true to Nikkei staples such as ceviche, tiradito, anticucho BBQ sushi, sashimi and tempura and ensures that ingredients are organic and sustainably sourced. Signature dishes include sea bass ceviche, yellowtail Nikkei sashimi and black cod yuzu-miso. Live theatrics like sushi- and sashimi-making along with a firepit and flames on our Robata Grill. Chotto Matte is also well known for expertly mixed cocktails and in-depth table interaction.
