Copaken Books welcomes new artisan mac-and-cheese company to Kansas City’s Skyline Collections

It’s a gouda day for The Skyline Collections as commercial real estate agency Copaken Brooks welcomed a new tenant to the second-tallest habitable building in Kansas City, Missouri.

KC Mac N’ Co is an artisan macaroni and cheese restaurant that reimagines comfort food, mostly its namesake, into elevated deliciousness. The restaurant is building upon its growing popularity on the first floor of the building, occupying 1,389 square feet at 1111 Main St. with direct access off Petticoat Lane.

KC Mac N’ Co’s Eleven Eleven Main restaurant is in the heart of downtown Kansas City, which is home to more than 37K residents and 110K downtown employees. Copaken Brooks’ Vice President of Retail Brokerage, Erin Johnston, represented the Landlord in the deal.

It all began with the belief that macaroni and cheese deserved a seat at the entree table. Steven Austin saw an opportunity in the market, so he partnered with a top Kansas City chef to share a mac recipe that lived up to those gooey standards. KC Mac N’ Co opened as a pop-up food truck in 2019, then expanded into Crossroads food hall, Parlor, in 2021.

The spot’s original triumph is the Signature Honey Serrano Mac, which features cavatappi pasta, a creamy, but not-too-rich cheese sauce, twice-fried chicken marinated in buffalo and buttermilk, and a honey serrano pepper glaze. They also offer a BBQ brisket option, rich Buffalo mac, waffles made completely out of Mac N’ Cheese, and sides like potato wedges and mac fritters.
